Once in a small town near Los Angeles, I tasted the tastiest burgers in my life. It was a completely unremarkable place, without an original interior design, without any concept and interesting design. But the queue for hamburgers was several tens of meters.

It was Billy Elwell's old butcher's restaurant in One Nice. Old man Billy is 93 years old and still stands at the grill, masterly tossing meat patties. I went to see Billy every day. He talked about the importance of the right choice and combination of meat for cutlets, shared the technique of frying it and explained the difference between a neat juicy hamburger and a burger falling apart from its size.

I got fired up with the idea of opening such place in Odessa. And now, after a lot of trainings, practicing, as well as consultations with Billy himself, we present Odessa Billy's Hamburgers.
